MEAT CURING 101

Or, everything you didn't want to know about meat curing :)

The first thing you have to know about meat curing is that it was a complete accident. Humans noticed that meat turned a bright pink color after it was smoked or certain ingredients were used in the smoking/drying/cooking process. The reason why it turned pink was because of natural nitrates found in smoke (that's what causes the pink smoke ring in BBQ meat), as well as sea salt and saltpeter. The awesome part about all of this, was that this accidental curing acted as an ancient antimicrobial that protected against C. botulinum (link to USDA FSIS food safety fact sheet), that nasty spore former that causes improperly canned foods to blow up like a balloon (also, if you find a can in your pantry that has blown up like a balloon, dO NOT CONSUME IT).

Why do humans continue to consume this cured meat. Well, it tastes pretty damn good. Go to any fast food restaurant and chances are there is a burger menu item with bacon. Or a breakfast item with ham. It just tastes GOOD. It also has that pretty pink color that stays with the meat after you cook it compared to the brown color you get when you cook uncured items. Moving away from the food quality aspects, it also helps extend shelf life of a meat product AND you have the food safety part I mentioned above. Not only does it protect against C. botulinum, but C. perfingens and L. monocytongenes as well.

How does this magical substance work??? Well, it's not magic, it's science! The protein responsible for meat color is called myoglobin.

In the middle of myoglobin, is an iron atom. What the redox state of the atom and what attaches to it affects the shape of the myoglobin, and this alters the color you see when you look at meat. So when it's just myoglobin hanging out by itself, a water molecule is attached to it and it appears purple. When oxygen attaches to the iron atom, it appears red. When the iron atom goes from a ferrous to a ferric state (basically, what happens when metal rusts), the meat appears brown. You can actually see this when you are out grocery shopping! If you see a piece of meat in a vacuum sealed bag, it appears purple. If the meat is in an over wrap tray, or in a display in a butcher counter, it looks red. When you see meat that has the discount sticker on it, it's starting to turn brown and needs to be consumed or frozen soon (That's why it was discounted. The meat is still safe to consume as long as you cook it properly and eaten that or the next day).

When you add nitrite to the mix, that's how you get the pink color change! The ancient curing methods used nitrate, but that needs to be reduced down to nitrite by a fermentation or a cure accelerator. Modern curing just uses nitrite, most commonly sodium nitrite. The sodium nitrite gets reduced to nitric oxide (this can be accelerated by adding ascorbate or erythorbate) and that binds with the meat to make nitrosomyoglobin. As the meat cooks, this creates nitrosohemochrome, which gives you the pink color!

In the US, most meat products are allowed 150ppm (parts per million, or 0.015%) according to the meat block weight. For bacon, it's a little lower at 120ppm (0.012%). Cure is very regulated in the US as well, because too much can harm humans. I remember when I was working as a quality assurance tech at a ready-to-eat (RTE) facility, I would have to weigh all the cure that production would use for the day. The weights and lot numbers of the cure would be recorded and tracked to make sure that the correct amount was used every day/night (depending on the shift). The storage was regulated as well. It could not be store above any other ingredient (so it wouldn't cause contamination if a bag opened), and it was locked up as well.

Like I mentioned earlier, modern curing used sodium nitrite (you might also see it called Sure Cure). It's normally white, but is dyed pink so it's not confused with other ingredients, like salt or sugar. Sure cure contains 6.25% nitrite, with the rest being salt. There are "natural" ingredients that can be used to cure meat, with the most common being celery powder. Cherry powder is also used as "natural" replacement for ascorbate, the accelerator mentioned above. Next time in the grocery store, check out the naturally cured bacon or ham. If the meat is pink, but the package says it is uncured, look on the back at the ingredient statement. Most likely, that product is using celery powder as its source of nitrite. The package might also say something about "no nitrites/nitrates added!". There will most likely be an asterisk next to that statement. Follow that asterisk to the bottom of the package to its partner asterisk. The statement there will probably says something along the lines to "except for nitrites/nitrates naturally found in celery powder and sea salt."

A Cleo-centric multi-chapter that shifts between past and present as Cleo blends her summer fling with Etho with flashbacks of married life with Martyn.

What they had may have been messy, but it was theirs.

Modern AU with limited mining and crafting, but hints of Minecraft mechanics in the tech. No inventory or magic in this one; going for realism.

We've got cars, grocery stores, corner stores, and subways.

Hanahaki disease is expected at some point in your life. Whether you work through it or call it quits is up to you.

Hanahaki is a chronic illness, but rarely terminal. It impacts your breathing and movement. People cough up petals, stems, and whole flowers (No blood, though)

Fairly realistic and non-magical mob biology. Ex: Endermen don't teleport, but they're boneless. I don't often portray tall, long-armed, solid-colored franchise creatures with funky eyes as nocturnal land squids, but it's weird it happened twice.

In line with Hanahaki themes, people in this world have an unusual connection with souls and love. Some people even link their souls during special ceremonies; Martyn and Cleo did this for their wedding. In this AU, such soulmates don't share pain, but they respawn at the same time.

-> For those unfamiliar, in Double Life SMP, Martyn and Cleo were randomly rolled soulmates, but lived separately.

But I love that idea. Manipulative Gem my beloved. My thinking is that she still remember some things, like her brother, her time in the watchers, and the last few weeks since she arrive to Hermitville. So basically the chunk that's missing is the whole Empires Town Villain arc, and all the reasons that made her go to the hero side. So without those reasons, Gem has an easy pathway to manipulate her back ingo the dark side, but first, they have to get rid of Ren and hia court.

And also, the angst when she meets Sausage again, and she doesn't know what she is talking about, "I'm Spore, no idea of who Paradox is" :)

Homestuck non-sburb AU where Sburb is, in fact, just Spore but with multiplayer. The beta kids start on a single planet together and they meet the trolls and alpha kids in the space stage (which is actually galaxy sized and hosts every planet made in Spore, and doesn't suck balls like IRL Spore's.) Prospit and Derse share a single really big planet (skaia) and are in the civilisation stage for most of HS. It mainly revolves around the between the two and the intervention of the kids and trolls. Most of Prospit and Derse's cities are military with a few religious, and then there's just WV (my beloved) going economic and building can town. The intermissions are just the antics of people logging off Sporb. (E.g John watching a movie with his dad. Very wholesome :) ) or the trolls flarping together or like. Idk maybe Dave goes and DJs at a club or nepeta has to go get her computer repaired because her Lusus accidentally knocked off a desk or something.

Would generally be a very wholesome AU. 10/10 I wish Spore had multiplayer and a good Space stage

New Acquaintances

More siren!Cas/Addams Family inspired AU. Enjoy!

It’s a week before his wedding, and Dean is freaking out. Not because he is getting married; no, he’s more than ready to spend his life with his wonderful siren.

But he’s about to call Bobby, who he hasn’t spoken to in years, and, well...

Thing is, Dad is dead, and to Sam, Dean is as good as, so he won’t have any family at his wedding unless...

He dials the number.

When Bobby picks up, he blurts out, “It’s Dean... Dean Winchester.”

Silence. Then, slowly, Bobby says, “Boy, you sure took your time.”

“I –“

“I’m damn glad you called.”

“You are?” he asks before he can help himself.

“Of course. So, what gives? I ain’t so flattered at the attention that I assume you called without reason.”

“I’m getting married.”

“You’re – congrats! Who’s the lucky lady?”

“His name is Castiel.”

Another pause. Dean’s heart starts beating faster.

Then, Bobby asks casually, “He treating you right?”

“I – yes. He does. And I was going to ask if you – if you’d like to come to the wedding.”

“Of course I want to! When and where?”

“Next week, but Bobby, there’s something else... Cas. He’s a siren.”

This time, Bobby is silent for almost a whole minute, and Dean’s about to freak out when he asks flatly, “How long have you been dating?”

“Two years” he replies, somewhat confused.

Bobby sighs. “Thank God, I was worried for a second there... so you’re nourishing him with true love.”

“You know how this works?”

“Come across a monster or two in my time” Bobby says simply. “Had to make sure, is all.”

Dean nods, even though he can’t see him. Somehow, he’s not that surprised.

Many people do have prejudices against monsters – he should know, thinking of Dad – but Bobby is a business owner, and smart, and he wouldn’t shy away from meeting them if it meant more clients, which it probably does.

“So you’re okay with...”

“Yes, but who cares about that – Dean Winchester is getting married! Never thought I’d see the day.”

Dean laughs. “Cas changed a few things for me, let’s stick with that.”

Bobby arrives two days later, determined to help with whatever hasn’t been dealt with. Dean is still a little hesitant to introduce him to all their friends, considering his age, but he takes to Cas easy enough.

“You make that boy happy, you hear, or you’ll have me to deal with.”

“I wouldn’t dream of anything different, sir” Cas replies and Bobby’s expression softens. “Just call me Bobby.”

Naturally, Dean can’t wait and prepare Bobby and make him meet all their neighbours during a nice dinner.

Because of course Crowley pops in when he’s not even settled in. “Squirrel, Feathers, there are some dwarves who are requesting permission to pass through, they are on some quest or another, didn’t ask, figured we don’t have the time to hasten to Mount Doom and back, with the wedding and everything –“

And he’s obviously held one of his rituals again. Great. Just great.

“And who is this, may I ask? Is he annoying you? Should I get rid off him?”

“Crowley –“

“Alright I won’t kill him but I could –“

“He gets somewhat... hyperactive after his beloved rituals” Cas tells Bobby, “He should be soon back to his old lovely self.”

Dean snorts.

“What is – what are you, exactly?” Bobby asks.

Crowley grins, thankfully calming down somewhat.

Even though he lets his eyes slowly turn red, the bastard.

And yet, god damn it, Dean wouldn’t have him any other way.

“Ah. Demon” Bobby says calmly.

“Yep.”

“Friend of yours, I assume” Bobby says.

“We’re besties, actually. Boys would have been lost without me when they first moved in.”

“Because our life has been so much richer for frog tornados” Dean mumbles and Bobby throws him a suspicious glance. “I’ll explain later.”

“Anyway, name’s Crowley, as you heard” the demon says “You need someone vengeful, I’m your guy. Just ask for a deal.”

As if Dean doesn’t know that he’d never make a deal with someone they’re close to.

“I’ll keep that in mind” Bobby answers as he shakes his hand. “Is it just me” he adds after Crowley’s vanished to deal with the dwarves, “Or is he... rather well behaved for a demon?”

“That’s Crowley for you. A bit annoying now and then, but you know... Don’t worry, you’ll meet the more stable population soon enough.”

“There’s Charlie and Gilda, for example” Cas says. “You’ll like them.”

“Yeah, well... gotta get settled first. You leave the boy alone for a few years, and he ends up...” Bobby continues to mumble to himself as he walks to their guest room.

“I think that went well” Cas mumbles, drawing Dean close and kissing him.

Dean nods. “No problem keeping your powers in control?”

Cas shakes his head. “No. I knew he was coming, and you keep me well-fed.”

Dean kisses him. “I love you.”

“I know” he deadpans.

“Sometimes I regret having introduced you to Star Wars.”

“No you don’t, my love.”

Dean shakes his head. He has no idea how he got so lucky.

Bobby seems fine when he comes down again, ready to take a walk and meet everyone. Maybe he seems a little too eager – as if he can’t wait to get it over with – but really, he’s going through quite a lot today and Dean can’t fault the guy.  

“That’s Crowley’s” he says, pointing to the house next to theirs.

“Looks...” Bobby trails off before determinedly finishing the sentence with “nice”.

They all know he was about to say “normal” but no one mentions it. He’s here, and he’s trying more than Dad would have, Dean’s certain.

“Hey, what’s going on at Charlie’s place?”

The house is indeed a side to behold. Plants are freely flowing out of every window except for the upstairs bedroom – a tree is busy growing out of that.

“We should check on them” Cas says and off they go, as always. There’s a reason Crowley calls them “the leaders of our group” to outsiders.

Only when the reach the home does Dean realize that Bobby’s at their side.

“Bobby...”

“It’s just flowers. Shouldn’t be too hard.”

Gilda’s magic can do all kinds of stuff with flowers though. “Charlie? Gilda?” he calls out.

“Was just about to call you, brother. Acquaintance passed by and called me” Benny greets him, stepping up to them. “Cas.”

“Benny.”

“Bobby Singer” he introduces himself. Benny shakes his hand. When he notices Bobby subtly checking for any signs of monstrosity, he grins and flashes his teeth.

“Ah. Vampire” Bobby says matter-of-factly.

“That’s right. Wife’s human though – for now. In case that makes you feel better.”

“I’m not –“ Bobby frowns. “species-ist? Damn it, boy, is there a word for that?”

“We haven’t found one yet” Dean says simply; he and Cas are already busy checking out the plants.

“What do you think? Are they in there?”

“It seems to be too full with...” Cas trails off as they lock eyes.

If Charlie and Gilda were in there...

“There’s definitely magic going on” Dean decides. “Best call Rowena.”

Cas nods.

“A witch, I assume, since we’re talking magic?” Bobby inquires.

“Yes. Crowley’s mother, actually –“

“Crowley’s what –“

“It’s a long story, sorry, we have to –“

Rowena picks up quickly enough, thankfully. She may live in a hut in the woods, but she has always been fond of modern technology, one of the few traits she shares with her son. “Dean.”

“Hi Rowena, look, sorry to disturb you, but we got a situation here at Charlie’s...”

“Don’t worry, I’ll be there in fifteen minutes.” She hangs up, knowing Dean well enough to realize that when he talks about “a situation” things are about to get ugly.

“They don’t appear to be growing anymore” Cas announces, “or at least, only as slowly as they normally would.”

“So whatever it was, it’s slowed down considerably. That’s something” Dean says.

Benny reaches out and carefully touches a leaf. “Nothing poisonous, as far as I can tell.”

“Alright, doesn’t seem so bad. Now if only – Cas, any word from Charlie or Gilda?”

Cas shakes his head. “I only got their mailboxes.”

“Doesn’t mean they have to be in there. Might just be at the movies, you know Charlie...” Dean begins with more conviction in his voice than he feels.

Damn it. Charlie and Gilda were looking forward to seeing them get married and party with their two best friends.

“Hey” Cas takes his hand. “We don’t know anything yet, Dean.”

“That’s true” he mutters. “What would I do without you?”

“When’s the witch coming again?” Bobby asks.

“Here I am” Rowena dramatically announces behind them, “And who is that impatient man?”

“That’s an old family friend, Bobby Singer. Bobby, Rowena – mightiest witch you’ll find this side of the Grand Canyon.”

“Flattery will get you everywhere. Now, let me look at that – she’s made quite a mess of it, hasn’t she.”

“You know what’s going on?”

“Of course, it’s –“

They are interrupted by Charlie screeching “Gilda your growth potion! Did you leave it on the stove!?”

As it turns out, they did indeed go to the movies and have only just returned, and everyone was too busy with the raging flora to hear them.

“Thank God” Dean breathes and draws Charlie into a quick hug. “Good to see you, Red.”

“I’d say the same, only our house has turned into something Mowgli and his friends could play in.”

“I’m working on it” Rowena says, taking a few ingredients out of her bag.”

“What are you going to do?” Gilda, who is very attuned to nature due to her being a fairy, asks.”

“Don’t worry, I’ll turn them back into spores and roots; they’ll still be alive, only not yet grown.”

Gilda relaxes as Charlie introduces them to Bobby.

The cleanup after the spell is remarkably easy, and soon, they’re back home.

“Does this happen often?” Bobby inquires.

Dean shrugs. “Not that often.” Technically, something happens almost every day, but since that something isn’t often Gilda ruining her potions, it is not technically a lie.

Bobby sighs. “I better get used to it, then.”

Dean doesn’t really know if he fully believes he can. But three days later, when he wakes up at night and finds Bobby and Crowley drinking in the living room because “we just dealt with a basilisk having crept into your house, Squirrel, we deserve it” he realizes Bobby won’t even have to try too hard.

I gave out a poll recently and you guys seem to like it when I use more panels per page for Ruptured Existence so from now on, I'll be doing that. Also because it looks more aesthetically pleasing to me. 

I did some post for Silvamyweek and it's over now, but I'm still posting for it still I finish! What really stoped me  was my 3DS's  R button is giving in so I can't really use COLORS 3D Like I wanted too.  

I have 1 prompt left on my Sonictober list! And I know exactly what to do for it.

Megaman Fandom

Let's see....where to start?

Aliagate week, I don't really want to contenure this anymore. So, I'm done. May post one last thing but I'm done.

I've been listening to the Protomen and I feel compelled to make a Megaman based comic. I have a....really crummy AU...Protoman's not in it though, Ironically. I'm not going to have two comics going at once so I'll take turns with it.

for the most part all my other ideas for fanfictions are well, fanfictions.  here are a couple of my ideas:

I have a few other ideas rolling around but they aren't formed yet. I've been watching /playing My friend play Battle network and most of the ideas are related to that.

oh my actual god, nonnie. i never thought i’d get a message like that and then you popped up and i’m pretty sure i YELLED and i can’t even put into words how much this means to me???? i’m a million times as inspired to finish this fic and i was already super inspired and aaaaaaaaahhhhh!°!!!!!1!

it’s also a really good thing for you to ask bc it’s an interesting and important question (that i had to think about for a while too).the point of 19-1026-71′s/paul’s character is kind of that he comes across as very human, even though he’s not (hence why, i think, hugh has such a problem with him in the beginning. though that might be paul’s temper too :p). but... what is an android without some cool extra functions, right?of course paul is faster, stronger etc, all those regular android qualities; he’s got far superior vision and hearing plus fancy things like x-ray vision.but (to answer your question lmao), no, he looks very much like our beloved mushroom enthusiast, just sans spore drive compatibility devices.

also now i’m thinking about what their uniforms look like ... probably a militarized version of the ones in discovery? not sure how to militarize them, but maybe with knee / elbow padding like the survival suits in beyond, plus like ... pouches? to ... store stuff in? i have no idea, i’ll have to think about that

because of my tags on that last post i reblogged, im gonna talk about the spores au. it has everything! it has space travel! alien plants! major character death! pinkberry! richjake! so much angst! mind control!

Jake Dillinger, Rich Goranski, Michael Mell, Chloe Valentine, and Brooke Lohst are off on a long space journey to investigate an odd radio signal coming from a distant sector that hasn't been documented very well. (Jake keeps semi-regular audio logs to send back to HQ, along with any reports and findings any of them find).

After a long journey, Michael is able to pinpoint where the signal is coming from. They find an old ship floating stagnant in space with a looping message. "For God's sake, leave us be, go away".

But they make the same mistake as everyone else does in a horror movie.

They investigate.

That was their job.

The ship is overgrown with off plants and Rich is enamoured. Unfamiliar plants in the undocumented sector? A botanist's dream. They connect to with ship to bring it to the nearby planet. In a moment of excitement, Rich rushes to board the ship without any safety gear. Jake is quick to catch him before he gets too far.

They land both ships on the planet's surface and Rich is out exploring. He does so every day. Michael is working through files and records to determine where the ship came from (and why there is no sign of any previous crew). Chloe has dragged Brooke aboard the new ship to try and get it up and running. Jake keeps track of reports and findings, occassionally joining Rich.

Jake is the first to notice that Rich's obsession with the plants is consuming him. It's all Rich focuses on. Jake begins to miss his Rich.

Brooke starts getting sick.

Rich disappears.

Jake wants to follow him, to go find him. Michael refuses to let Jake go off alone, it's too dangerous. So Jake spends sleepless nights waiting for his Rich to come back for him. He swears he can hear Rich singing or calling out to them.

Brooke starts sharing the same vacant look in her eyes as Rich did before he disappeared. She finds herself wanderin close to the edge of the wilderness.

Late one night, in Brooke's seemingly last moment of sanity, (although that's debatable, it's like she's in a trance), she makes Jake promise to take care of Chloe is something were to happen to her.

And then Brooke disappears.

Days later, while exploring the abandoned ship, Jake finds Brooke. Barely breathing, covered in fungi. They're feeding off her, but they're the only thing keepin her alive.

Suddenly, the masses of plants make sense.

Chloe refuses to leave her side.

Michael finds records of the old ship. Him and Jake report their findings back to HQ. Michael decides to risk exploring the planet for signs of the previous crew.

Michael doesn't come back.

Jake's alone.

If only they left sooner. He blames himself. They should have left when Rich disappeared and Brooke got sick. But they stayed, and Jake is convinced it's because of him.

(Chloe and Michael decided to stay because they needed to fulfil their mission. But no mission is worth risking their lives. If only they had thought about that)

Suddenly, Rich is back.

But it's not his Rich.

This Rich has a wild look in his eyes, covered in fungi. Jake's pleas fall on deaf ears. Rich has found a way for him and Jake to be together forever, and he's going to do it no matter what Jake wants.

The last recording HQ gets is Jake pleading for his life before Rich cuts the recording.
